Sicilian Coffee Roasting

Maximising the full flavour potential.

The differences are not what one might expect, the main difference between a Sicilian Style Roast and conventional roasting lies in the quality of the heat delivered to the beans.

The more oil preserved within the bean, the more exquisite the final flavor will be. The humidity of a Sicilian Roast seems to maintain the natural sugars in the beans during the roasting process, hence preserving more flavour. Ensuring the coffee is lower in acidity and higher in body, while retaining a smoother finish.

The unique advantages of Sicilian Roasting do not come without challenge, as years of experience are required to develop the intuition and instinct necessary to master the process.

Each bean type is roasted individually, then weighed and finally blended to an exact standard to ensure perfection each time.  No Water Quenching or Blend Roasting is done (when all the different types of Coffee are mixed together at the same time and roasted).

Our roasters are made with special volcanic bricks to help maintain temperature. Precise thermoregulated burners and convection air circulation gives our roasters a superior edge in controlling our flavour profiles. When our coffee is finished roasting, it is then transferred to a cooling chamber where it is turbo cooled to lock in the desired profiles. Combining these tools with our know-how experience, we are able to maintain control of the roasting process with a very high level of consistency. As you can see, Sicilian Roasting is an artisan craft using traditional methods, paired with modern technology.  Blending art, romance and science.
